Ozone Helps Wine Makers Manage Unwanted Microorganisms
Wine makers are confronted with multiple hurdles to provide exceptional quality products to a continuously growing number of sophisticated palates. They pay close attention to microorganisms found in and around wineries; these include wild yeast (i.e. Brettanomyces), bacteria such as Acetobacter, and multiple mold and fungus species (including Racodium cellare and Zygomycetes) that can affect wine quality (or at least flavor nuances). Most wine makers pay particular attention to 2,4,6 –trichloroanisole (TCA, also known as “cork taint”), that is thought to come from sources such as contaminated wine facilities, transportation vessels or bottling equipment, airborne molds or chlorine-based compounds. During the past fifteen years, ozone has played an important role in helping to eradicate TCA in wineries, by providing effective ozone-enriched cold water surface sanitation in nearly every process in the winery, and nearly eliminating chlorine-based disinfectant use and killing a broad spectrum of microorganisms while leaving no harmful byproducts.
