Ozone Helps Wine Makers Manage Unwanted Microorganisms

Wine makers are confronted with multiple hurdles to provide exceptional quality products to a continuously growing number of sophisticated palates. They pay close attention to microorganisms found in and around wineries; these include wild yeast (i.e. Brettanomyces), bacteria such as Acetobacter, and multiple mold and fungus species (including Racodium cellare and Zygomycetes) that can affect wine quality (or at least flavor nuances). Most wine makers pay particular attention to 2,4,6 –trichloroanisole (TCA, also known as “cork taint”), that is thought to come from sources such as contaminated wine facilities, transportation vessels or bottling equipment, airborne molds or chlorine-based compounds. During the past fifteen years, ozone has played an important role in helping to eradicate TCA in wineries, by providing effective ozone-enriched cold water surface sanitation in nearly every process in the winery, and nearly eliminating chlorine-based disinfectant use and killing a broad spectrum of microorganisms while leaving no harmful byproducts.

As a USDA Organic approved food additive, ozone effectively kills all known food and human pathogens, including E. coli, Listeria, Salmonella, Staphylococcus, Campylobacter, Pseudomonas, Aspergillus, Brettanomyces, Acetobacter, Trichophyton, Bacillus, Adenovirus, and Norovirus. Through applications specialized for every stage of wine making, DEL can help improve product quality while increasing productivity in existing operations or new facilities. DEL Ozone provides Sanitation Solutions designed to integrate seamlessly into wine production and processing operations.

Ozone disinfection is commonly applied at multiple points in wineries:

  • Direct Contact on grapes as the first point of antimicrobial intervention
  • Barrel and Tank Washing wooden or SS barrels and tanks (inside and outside)
  • Surface Sanitation on any wettable surface
  • CIP for Filler – as an additional point of intervention
  • Drains, Transfer Lines, Hoses, Valves, Conveyors

DEL is a Pioneer in the Use of Ozone in Wineries

In 1998 DEL was approached by local California wineries asking for safe and effective ozone systems that would integrate into the unique winery environment. DEL designed mobile and skid-mounted systems that took all aspects of a typical winery into consideration, keeping in mind that these systems had to withstand a rigorous environment, be safe for workers in close proximity, be efficacious and safe for equipment, including oak wine barrels.

DEL was the first company to attain NSF listings. These listings were predicated by two years of stringent NSF third-party validation under AOAC Methods sanctioned by the EPA. DEL is the only ozone system manufacturer to attain NSF listing with the support of these AOAC studies. There are hundreds of DEL Ozone systems in use in wineries worldwide. DEL offers multiple ozone sanitation systems to accommodate budgetary requirements from small boutique wineries to corporate giants. DEL systems are available in small and medium sized mobile systems, to large centralized systems capable of remote monitoring and controls that tie into facility SCADA systems.
